Ingredients
  Lean beef 2 Pound, boiled and chopped fine when cold (Fresh)
  Suet 1 Pound, chopped very fine
  Chopped apples 5 Pound
  Seeded raisins 1 Pound
  Currants 2 Pound
  Sliced citron 3⁄4 Pound
  Cinnamon 1 1⁄2 Teaspoon
  Nutmeg 1 , grated
  Ground mace 2 Tablespoon
  Ground cloves 1 Tablespoon
  Allspice 1 Tablespoon
  Fine salt 1 Tablespoon
  Brown sugar 2 1⁄2 Pound
  Sherry/1 quart boiled cider 1 Quart
  Brandy 1 Pint
Directions

MAKING
1) In a wide bowl, mix chopped beef, suet, apples, raisins, currants, citron, cinnamon, nutmeg, mace, cloves, allspice, salt, sugar and the alcohol. Mix them well.
2) Put the mixture in jars.
3) Store the jars in a cold, dry place.

SERVING
4) Let the meat mixture stand for at least 24 for hours before you use. Use the mince meat in a dish of your choice and serve.
