Three Meat Pate
|Chicken meat||450 Gram|
|Boneless fatty pork||565 Gram|
|Bacon slices||225 Gram|
Process the meats in a chilled food processor until very fine.
Place in a bowl and combine the sherry, egg, herbs and salt.
Line a 9" (23 cm) loaf pan with foil wrap.
Grease the foil and line with bacon slices.
Fill with mousseline mixture.
Cover with a piece of buttered wax paper.
Place in water bath and bake in a preheated 250°F (130°C) oven for 3 hours.
Remove and allow to set for 30 minutes.
Chill overnight in the refrigerator.
Unmold and remove bacon.
Wipe away excess fat.
Slice and serve.
