Skewers of Meat Calabrian Style
|Boneless ham/Pork loin||1 Pound|
|Boneless veal rump||1 Pound|
|Olive oil||1⁄4 Cup (4 tbs)|
|Finely chopped fresh basil||1 Tablespoon|
|Crushed oregano||1 Teaspoon|
|Crushed dried chilies||1⁄2 Teaspoon|
|Water||1⁄2 Cup (8 tbs)|
Cut the meat into small thin slices.
Thread the slices onto six skewers, alternating pork and veal.
Pour the oil into a small roasting pan, and brown the skewered meat in the oil over high heat.
Sprinkle all of the seasonings over the skewers, add the water to the pan, cover and cook for 45 minutes in a preheated 325° F. [170° C] oven.
