Rock Cornish Game Hens

|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Uncooked rice||1 Cup (16 tbs)|
|Mushrooms||1⁄2 Pound, sliced|
|Chicken bouillon||1 Cup (16 tbs)|
|Dry red table wine||1 Cup (16 tbs)|
1. Remove giblets from game hens. Wipe with a damp cloth. Tie legs together with string.
2. Melt butter in Dutch oven over medium heat. Put hens in Dutch oven and brown well on all sides. Remove hens and keep warm.
3. Place rice in Dutch oven and cook and stir until lightly browned. Add mushrooms, salt, bouillon and red wine. Place hens on top of mixture.
4. Cover with vac-control valve closed. Lower heat and simmer 1 hour to 1 hour and 15 minutes or until rice is cooked and hens are tender.
