Meat Or Poultry Forcemeat
|Chopped chicken/Veal||3 Cup (48 tbs) (Raw)|
|Fine dry bread crumbs||1⁄4 Cup (4 tbs)|
|Minced onion||1⁄2 Teaspoon|
|Lemon juice||1 Tablespoon|
|Melted butter/Margarine||2 Tablespoon|
|Egg||1 , slightly beaten|
1.Put the meat through the food chopper 4 times.
2. Stir in the crumbs, salt, pepper, onion, lemon juice, melted butter or margarine and the egg. Beat until the mixture is light and smooth.
3. This stuffing may be used for a small roasting chicken of 3 pounds; or is enough to fill 2 small squabs. It may also be used to fill veal rolls for Veal Birds
