Hopei Diced Meat

Ingredients
  Boneless meat 1 Kilogram, boiled and diced into 1x 1 inch pieces
  Tomatoes 500 Gram
  Onions 2 Large, chopped
  Fresh ginger 1 Inch, grated
  Garlic 4 Clove (20 gm), crushed
  Sugar 1 Tablespoon
  Dry sherry 2 Tablespoon
  Soy sauce 3 Tablespoon
  Chicken broth 1 Cup (16 tbs), mixed with corn flour and water
  Corn flour 1 Tablespoon
  Water 1⁄2 Cup (8 tbs)
  Chili sauce/Tabasco sauce 1⁄2 Teaspoon
  Salt 1 Teaspoon
  Peanut oil 1 Cup (16 tbs) (For deep frying)
  Chili garlic sauce 1 Cup (16 tbs)
Directions

Cut the tomatoes into quarters and remove seeds.
Add half the sugar, mash well and simmer until reduced to a puree.
Strain.
Heat the oil and deep fry the meat cubes.
Drain and set aside.
In the remaining oil, saute onions, garlic and ginger.
Add sherry, soya sauce and remaining sugar.
Pour in the broth and let it simmer for 5 minutes.
Add the meat cubes and tomato puree and let it simmer for a further 5 minutes.
Add the cornflour mixture and stir well for 3 minutes.
Add chilli sauce, salt and mix well.
Remove from heat, sprinkle chilli-garlic sauce and serve.
