Kidneys In Parsley Butter
|Veal kidneys/Iamb kidneys||1 Pound, trimmed|
|Lemon juice||1 Teaspoon|
|Freshly ground pepper||To Taste|
|Chopped fresh parsley||1 Tablespoon|
|Enriched white bread slices||2 , toasted|
Cut kidneys into slices 1/4 inch thick.
Melt margarine in top of double boiler over boiling water.
Add kidneys, lemon juice, salt, and pepper.
Cook 10 minutes or until tender.
Stir in parsley and serve on toast.
