Cornish Hens With Bacon Stuffing
|Bacon stuffing||1 Cup (16 tbs)|
|Rock cornish hens||3 3⁄4 Pound (3 whole, 1 1/4 pounds each)|
|Margarine/Butter||1⁄4 Cup (4 tbs), melted|
1. Prepare Bacon Stuffing.
2. Stuff each hen with about 1/2 cup stuffing. Secure opening with wooden skewers. Fasten neck skin to back with wooden skewer. Tie drumsticks together. Place hens breast sides down on microwave rack in baking dish. Mix margarine and paprika; brush 1/2 of mixture over hens. Cover with waxed paper and microwave on high (100%) 15 minutes.
3. Turn hens breast sides up and rearrange; brush with remaining margarine mixture. Cover and microwave until done, 15 to 20 minutes longer. To serve, cut hens with kitchen scissors, cutting through the breast and along backbone from tail to neck. Serve with dressing.
