Salt Packed Capon
|Oyster mushrooms||2 Tablespoon, chopped|
Preheat oven to 400° F.
Loosen skin around breast of capon and slide mushrooms under skin.
Pour 3 to 4 inches of salt into a heavy casserole or roasting pan.
Place capon, breast side up, on salt and pack remaining salt around capon.
Roast 1 3/4 hours, uncovered.
