  Round steak 2 Pound, cut 1/2 inch thick
  Melted shortening 4 Tablespoon
  Ground cured ham/Fresh pork 1⁄2 Pound (Ham Preferred)
  Coffee cream 1⁄2 Cup (8 tbs) (Thin Table Cream)
  Prepared mustard 1 Tablespoon
  Flour 4 Tablespoon
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Cooked strained tomatoes 1 Cup (16 tbs), or mashed well

Brush one side of steak with 2 tablespoons melted shortening.
Combine ham or pork, cream, and mustard; spread on meat.
Roll up as for jelly roll; skewer or sew up with string.
Sprinkle with combined flour, salt, and pepper.
Brown steak in remaining 2 tablespoons of melted shortening in heavy kettle or baking dish with tight-fitting cover.
Add tomatoes.
Cover and bake in moderate (350-degree) oven 1 1/2 to 2 hours, or until meat is tender.
Mix juice in kettle with water to make gravy.
