Dredge each partridge piece with flour.
In a heavy bottomed cooking pot, melt pork fat.
Over low heat, brown partridge pieces 25 minutes.
Remove from pot.
In hot cooking pot, pour cabbage and onions.
Cook 15 minutes, stirring often.
Return partridges to cooking pot.
Season with thyme, salt and pepper.
Add wine or cider.
Simmer around 1 hour or until tender.
