Partridge With Cabbage

Ingredients
  Partridges 3 , cut into halves
  Flour 1⁄2 Cup (8 tbs)
  Pork fat 1 Cup (16 tbs), diced
  Green cabbage head 1 , coarsely chopped
  Onions 6 Large, minced
  Thyme 1⁄2 Teaspoon
  White wine/Cider 1⁄2 Cup (8 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Dredge each partridge piece with flour.
In a heavy bottomed cooking pot, melt pork fat.
Over low heat, brown partridge pieces 25 minutes.
Remove from pot.
Set aside.
In hot cooking pot, pour cabbage and onions.
Cover.
Cook 15 minutes, stirring often.
Return partridges to cooking pot.
Season with thyme, salt and pepper.
Add wine or cider.
Cover.
Simmer around 1 hour or until tender.
