Partridge With Cabbage
|Carrot||1 , scraped|
|Onion||1 , chopped|
|Garlic||1 Clove (5 gm), crushed|
|Water||1 Cup (16 tbs)|
|Dry white wine||1⁄4 Cup (4 tbs)|
|Port||1⁄4 Cup (4 tbs)|
|Salt pork slices||4 (Thin Slices)|
Plunge cabbage into salted boiling water.
Remove the outside leaves.
Place pork and cabbage in bottom of clay baker.
Add carrots, onions, and garlic.
Nestle birds into the mixture.
Moisten with water, wine and port.
Close and bake.
