Prepare to be astounded by the addictive flavors of the Green Mayonnaise! This is a very unique and tasty sauce! You simply have to try the Green Mayonnaise!
Ingredients
  Raw spinach leaves 6 , washed well, patted dry and coarsely chopped
  Fresh tarragon leaves 1 1⁄2 Tablespoon
  Chopped chives/Green part of scallion 1 Tablespoon
  Chopped dill 1 1⁄2 Teaspoon (Fresh / Dried)
  Fresh marjoram 1 1⁄2 Teaspoon
  Lemon juice 1 Tablespoon
  Egg 1
  Dry mustard 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Sugar 1⁄2 Teaspoon
  Olive oil 1 Cup (16 tbs)
  Tarragon vinegar 1 1⁄2 Teaspoon
Directions

Combine the spinach, herbs, lemon juice, egg and seasonings in the container of an electric blender.
Blend at high speed ten seconds.
Immediately reduce the speed to low and add half the olive oil in a slow stream.
Stop the motor and add the vinegar.
Blend at high speed and immediately add the remaining oil in a steady stream.
