Basic Mayonnaise Plus Variations
|Dry mustard||1⁄2 Teaspoon|
|Fresh lemon juice||2 Tablespoon (or vinegar)|
|Salad oil||1 Cup (16 tbs)|
Blend egg, salt, sugar, mustard and cayenne in deep bowl.
Mix in lemon juice.
Add 1/4 cup oil, a few drops at a time, and beat well with rotary beater or electric mixer (at medium speed) after each addition; add remaining oil, about 2 tablespoons at a time.
