Ingredients
  Egg 1
  Dry mustard 1⁄2 Teaspoon
  Salt To Taste
  Salad oil 1 1⁄4 Cup (20 tbs)
  Wine vinegar/Lemon juice 1 Tablespoon
Directions

Mix the egg, egg yolk, mustard, salt and pepper until smooth .
With the machine running, pour half the oil slowly through the feeder tube .
Switch off the machine to change blades.
Add the remaining oil through the feeder tube and mix until the mayonnaise is thick .
Add vinegar or lemon juice and process until mixed.Green Mayonnaise Add 1 chopped garlic clove and 1 tablespoon each finely chopped parsley, chives and basil to the mayonnaise.
Process just long enough to blend.
Curried Mayonnaise Add 1 tablespoon concentrated tomato paste, 1 tablespoon curry paste, 1 teaspoon lemon juice and 2 tablespoons heavy cream to the mayonnaise.
Process just long enough to blend.
Nigoise Mayonnaise Add 1 chopped garlic clove and 1/2 teaspoon chopped tarragon with 2 tablespoons concentrated tomato paste to the mayon- naise.
Process to blend.
