Tofu Mayonnaise

Ingredients
  Silken tofu 5 Ounce (Use 1/2 Block)
  Extra virgin olive oil 2 Tablespoon (May Be Part Extra-Virgin)
  Olive oil 2 Tablespoon (May Be Part Extra-Virgin Type)
  Fresh lemon juice 2 Tablespoon
  Dijon mustard 1⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
  Ground black pepper/Pepper / several splashes of tabasco / other hot pepper sauce 1 Dash
  Garlic clove/1 tablespoon chopped scallion bulbs 1 Small
Directions

Place all of the ingredients in a blender or food processor and whirl until smooth.
Add a tablespoon of water if the mayonnaise seems too thick.
Covered and refrigerated, Tofu Mayonnaise will keep for about a week.
