Tofu Dijon Mayonnaise
|Dijon-style mustard||1 Teaspoon|
|Cider vinegar||3 Tablespoon|
|Olive oil||125 Milliliter (1/2 Cup)|
|Freshly ground black pepper||To Taste|
1.Place tofu, mustard and 1 tablespoon vinegar in a food processor or blender and process until smooth.
2.With the machine running, slowly add 2 tablespoons oil then 1 tablespoon vinegar.
Continue in this way until all the oil and vinegar is used.
Season to taste with pepper.
