In a food processor combine the egg, egg yolk, lemon juice, salt, and pepper.
Process for 20 to 30 seconds, or until blended.
With the machine running, pour in the oils in a very slow, steady stream, and process until thoroughly incorporated and the mixture is thick.
Store in the refrigerator for up to 3 days.
Hot-&-spicy mayonnaise Substitute 3 tablespoons fresh lime juice for the lemon juice.
Add 1 garlic clove, chopped, 1 teaspoon crushed red pepper flakes, and 1 1/2 teaspoons mild or medium-hot chile powder to the egg mixture.
After the mayonnaise is prepared, stir in 2 tablespoons chopped fresh cilantro.
