Tofu Mayonnaise

Ingredients
  Firm tofu 1⁄2 Pound
  Dry mustard/1/4 teaspoon prepared mustard 1⁄2 Teaspoon
  Cayenne pepper 1⁄8 Teaspoon (adjust quantity as per taste)
  Salt 1⁄2 Teaspoon
  Fresh lemon juice 2 Tablespoon
  Corn oil 3 Tablespoon
  Water 2 Tablespoon
Directions

In a food processor or blender, process tofu, mustard, cayenne pepper, salt and lemon juice until mixed.
With machine still running, add oil very slowly and then add water.
Blend until smooth.
Stop the machine a few times during processing and scrape the sides.
Keeps for up to three months when refrigerated in an airtight container.
