Mayonnaise With Dijon Mustard
|White pepper||1 Pinch|
|Lemon juice/White wine vinegar / tarragon vinegar||1 Tablespoon|
|Dijon style mustard||1 Teaspoon|
|Vegetable oil/3/4 cup vegetable oil and 1/4 cup olive oil||1 Cup (16 tbs)|
|Boiling water||1 Tablespoon|
Bring ingredients to room temperature before beginning.
In a medium bowl, beat egg yolks with a whisk until pale, about 1 minute.
Beat in salt, white pepper, lemon juice or vinegar and mustard.
Begin adding oil, 1 drop at a time, beating vigorously and constantly.
As mayonnaise begins to thicken, add remaining oil in a thin stream, beating constantly.
After all oil has been incorporated, beat in water.
Season to taste.
