Mayonnaise With Dijon Mustard

  Egg yolks 2
  Salt 1⁄4 Teaspoon
  White pepper 1 Pinch
  Lemon juice/White wine vinegar / tarragon vinegar 1 Tablespoon
  Dijon style mustard 1 Teaspoon
  Vegetable oil/3/4 cup vegetable oil and 1/4 cup olive oil 1 Cup (16 tbs)
  Boiling water 1 Tablespoon

Bring ingredients to room temperature before beginning.
In a medium bowl, beat egg yolks with a whisk until pale, about 1 minute.
Beat in salt, white pepper, lemon juice or vinegar and mustard.
Begin adding oil, 1 drop at a time, beating vigorously and constantly.
As mayonnaise begins to thicken, add remaining oil in a thin stream, beating constantly.
After all oil has been incorporated, beat in water.
Season to taste.
