Mayonnaise And Variations
|Mustard||1 Teaspoon (Dijon Style/Dry)|
|Oil||1 1⁄2 Cup (24 tbs)|
|Vinegar/Lemon juice||2 Tablespoon|
In a bowl, mix the salt, pepper, egg yolks, and mustard.
Begin adding the oil a teaspoonful at a time.
Continue to whisk until the mixture emulsifies (thickens).
Add the oil, a little more rapidly, in a thin stream, as you whisk.
Finish with 1-2 tablespoons vinegar or lemon juice, depending on consistency desired.
