Tofu Mayonnaise

Ingredients
  Firm tofu 8 Ounce, cubed
  Plain low fat yogurt 1⁄2 Cup (8 tbs)
  Tarragon vinegar 1 Tablespoon
  Vegetable oil/Olive oil 2 Teaspoon
  Prepared mustard 1 Teaspoon
  Salt 1⁄4 Teaspoon (Or To Taste)
  Ground red cayenne pepper/Black pepper 1⁄8 Teaspoon (Or To Taste)
  Minced fresh tarragon/Chives/parsley 2 Tablespoon
Directions

1 ln a food processor or blender, whirl the tofu, yogurt, vinegar, oil, mustard, salt, and red pepper, scraping down the sides once, for 30 seconds or until smooth.
Transfer the mayonnaise to a container and stir in the tarragon.
Cover and chill for 30 minutes or until thickened.
Will keep, covered and refrigerated, for up to 1 week.
