Tofu Mayonnaise With Honey
|Tofu||2 Pound (1 square)|
|Olive oil||1⁄2 Cup (8 tbs)|
|Vinegar||1⁄2 Cup (8 tbs)|
|Sea salt||1 Teaspoon|
Liquefy Tofu in blender.
Add oil slowly, then seasonings, vinegar, and honey.
Taste, and add more honey if too tart; add more vinegar if not tart enough.
This mayonnaise cannot be heated or it will separate, but it can be used as a topping for hot vegetables if added after vegetables are off the heat.
Tofu mayonnaise to which 1 teaspoon caraway has been added makes a delightful binder for cold slaw.
Use Tofu mayonnaise seasoned with tarragon on cold vegetables.
