|Dry mustard||1⁄4 Teaspoon|
|Lemon juice/Wine vinegar||2 Teaspoon|
|Vegetable oil/Or equal amounts of vegetable and olive oil||2⁄3 Cup (10.67 tbs)|
Combine the whole egg, mustard and salt in the container of an electric blender.
Cover the jar and blend at top speed for 30 seconds.
Pour in the lemon juice or wine vinegar and, still blending at high speed, pour in the oil as slowly as possible.
If the mayonnaise thickens too much at any point, add a few more drops of lemon juice or vinegar.
