Masala Upma

Ingredients
  Semolina 1 Cup (16 tbs)
  Hot water 2 Cup (32 tbs)
  Salt 1 1⁄2 Teaspoon
  Sugar 1 Teaspoon
  Chopped peanuts/Cashewnuts 1 Tablespoon
  Onion 1
  Green chilies 5
  Mustard seed 1 Teaspoon
  Urad dhal 2 Teaspoon
  Shelled peas 1⁄2 Cup (8 tbs), boiled
  Potatoes 2 , boiled
  Ghee 2 Tablespoon
  Oil 2 Tablespoon
  Coriander leaves 2
  Curry leaves 4
Directions

Mix and heat ghee and oil.
Add the mustard seeds, when they splutter, add the urad dhal and curry leaves.
Add and fry chopped onion till transparent.
Add and fry the semolina and chopped chillies, stirring.
When well roasted, make a well in the centre, place the chopped tomatoes in it and cover with semolina.
Cook for a minute then add the hot water, salt and suqar.
Blend well, lower the flame and cook covered.
When nearly done add the peas, potatoes and nuts.
Check salt and take off from fire.
Garnish with chopped coriander leaves and serve hot.
