Dhan Sakh Masala

  Turmeric 1 Inch (Preferably The Round Variety)
  Curry leaves 50 Gram
  Cumin seeds 250 Gram
  Caraway 60 Gram
  Coriander seeds 1 Kilogram
  Mustard seeds 50 Gram
  Fenugreek seeds 50 Gram
  Cinnamon 50 Gram
  Cloves 50 Gram
  White cardamoms 50 Gram
  Black peppercorns 200 Gram
  Poppy seeds 50 Gram
  Bay leaves 50 Gram
  Dried orange peel 50 Gram (With The Pith Removed)
  Dried sweet lime peel 50 Gram (With The Pith Removed)

Dry roast each ingredient individually with 1-2 tsp of oil on a tava.
Cool, grind and mix.
Store in an airtight glass container.
It can be kept for over one year.
