Masala Vegetables

Ingredients
  Coconut powder 2 Tablespoon
  Ground coriander 2 Teaspoon
  Chili powder 1 Teaspoon
  Black peppercorns 1⁄2 Teaspoon, crushed
  Garam masala 1 Teaspoon
  Garlic pulp 1 Teaspoon
  Ginger pulp 1 Teaspoon
  Turmeric 1⁄4 Teaspoon
  Tamarind paste 1 Tablespoon
  Salt 1 Teaspoon
  Poppy seeds 1 Teaspoon
  Water 1⁄4 Pint
  Corn oil 5 Tablespoon
  Onions 2 , finely chopped
  Cauliflower 1 Small, broken into small florets
  Carrot 1 Large, diced
  Potatoes 2 , diced
  Frozen peas 2 Ounce (50 Gram)
  Sweetcorn kernels 2 Ounce (50 Gram)
  Coriander 1 Tablespoon, chopped
  Red chilies 2
  Soft brown sugar 2 Teaspoon
Directions

In a bowl, mix the coconut powder together with the ground coriander, chilli powder, black pepper, garam masala, garlic, ginger, turmeric, tamarind, salt and poppy seeds.
Stir in the water to form a paste.
Heat the oil in a heavy-based saucepan, add the onions and fry until golden brown.
Pour the spice mixture into the onions and stir-fry over a low heat for 2-3 minutes.
Start to add the vegetables one by one, stirring all the time.
Finally, add the fresh coriander, red chillies and brown sugar.
Cover the pan and steam cook the vegetables over a very low heat until they are all cooked.
If the dish seems too dry to cook the vegetables by steaming, just add 150 ml (1/4 pint) water to the pan.
Serve with rice or chapatis.
