Sweet Potato And Marshmallow Bake

Ingredients
  Sweet potatoes 1 1⁄2 Pound (700 Gram)
  Salt To Taste
  Clear honey 2 Teaspoon
  Butter 1 Ounce (25 Gram)
  Orange juice 3 Fluid Ounce (Extracted From 1 Orange, About 1/3 Cup)
  Eggs 2 , well beaten
  Marshmallows 8 Ounce (250 Gram)
Directions

Bake the sweet potatoes in a moderate oven (180°C/350°F or Gas Mark 4) for 1 hour or until they are tender.
Remove from the oven, cool, then peel the skins.
Put the sweet potatoes, salt to taste, the honey, butter, orange juice and eggs in a mixing bowl.
Mash together until a thick, smooth puree is formed.
Transfer to a greased baking dish and smooth the top.
Bake in the moderate oven for 10 minutes.
Remove from the oven and arrange the marshmallows over the top.
Increase the temperature to fairly hot (200°C/400°F or Gas Mark 6) and bake for a further 10 minutes or until the marshmallow topping is lightly browned.
Serve hot.
