Grate the orange and lemon peel and combine with the grated carrots in a large pot.
Squeeze all the juice from oranges and lemons and add to the pot.
Stir in the sugar and mix until well combined.
Let this mixture sit, at room temperature, for approximately 10-12 hours or overnight.
Bring the mixture to a boil and boil constantly for approximately 1 hour.
Have ready sterilized jars.
Pour the mixture into the sterilized jars and seal completely.
