Ginger Marmalade

The ginger marmalade is prepared with ginger and pection. Cooked along with sugar and water, the ginger marmalade has a unique and savory taste and is quite pleasing and can be cooking too.
Ingredients
  Ginger root 1 Kilogram, peeled, finely chopped
  Water 3 Cup (48 tbs)
  Sugar 2 Cup (32 tbs)
  Pectin 1 Tablespoon
Directions

1.
Place ginger and water in a 3-litre casserole dish.
Cover and cook for 15-18 minutes on HIGH, stirring halfway through cooking.

Stir in sugar, cook, uncovered, a further 20-22 minutes on HIGH.
3.
Stir in pectin, cook for 8-10 minutes on HIGH.
4.
Pour into hot sterilised jars
