Mock Marmalade

Ingredients
  Dried apricots 2 Cup (32 tbs)
  Orange rind 1 Tablespoon, powdered
  Boiling water 1 Cup (16 tbs) (Alter Quantity As Required)
  Honey 2 Tablespoon
Directions

Cover apricots with boiling water.
Let stand overnight.
Drain, reserving juice for compote, etc.
Mince apricots.
Add remaining ingredients.
Pack into hot sterilized jars.
Cover.
Keep at least 2 weeks before using.
