Apple Ginger Marmalade

|Green ginger||1 Ounce|
Dissolve the sugar in the water.
Chop the peeled apples and ginger fine.
Add to syrup with the lemon rind and simmer slowly until the mixture looks clear, about 4 hrs.
Pour into sterilized glasses, seal with paraffin and store in a cool dry place.
