Winter Sunshine Marmalade
|Water||1 1⁄2 Liter|
|Granulated sugar||8 Cup (128 tbs)|
Using sharp knife, trim stem end from oranges and lemon; cut into quarters.
Remove seeds; set aside.
If Cut fruit into slices about 1/8 inch (3 mm) wide; place in large no aluminum Dutch oven or wide heavy saucepan; pour in water.
Tie seeds in spice bag or square of cheesecloth; add to fruit mixture.
Bring to boil; reduce heat to low and gently simmer, covered, for 2 hours to make about 8 cups (2 L).
Remove and discard seeds.
Add equal volume of sugar; stir until dissolved.
Bring to boil over high heat and boil briskly, stirring often, for about 20 minutes or until setting point is reached.
Remove from heat; stir for 5 minutes, skimming off any foam with metal spoon.
Ladle into hot sterilized jars and seal.
Store in cool, dark, dry place.
Makes about 9 cups (2.25 L).
