Fresh Grapefruit Marmalade

Ingredients
  Grapefruit 2 Large
  Oranges 4 Large
  Lemons 2 Large
  Sugar 10 Cup (160 tbs)
  Ginger root pieces 3
  Vanilla 1 Tablespoon
Directions

Cut grapefruit, oranges and lemons in thin slices; re- move seeds.
Cut each slice into 1/4-inch strips.
Place fruit in deep kettle or saucepan; add water to cover.
Bring to boiling point; drain.
Repeat twice.
Add 4 cups cold water; bring to a boil.
Reduce heat; sim- mer for 1 hour and 30 minutes or until fruit is ten- der.
Add sugar and gingerroot.
Cook over low heat, stirring frequently, for about 2 hours and 30 minutes or until thickened; add vanilla.
Spoon into sterilized jars; seal immediately.
