|Chopped cucumbers||2 Cup (32 tbs)|
|Sugar||4 Cup (64 tbs)|
|Lime juice||1⁄2 Cup (8 tbs)|
|Grated lemon rind||2 Tablespoon|
|Green food coloring||1 Teaspoon|
|Fruit pectin||1⁄2 Cup (8 tbs)|
"Combine cucumbers, sugar, lime juice and lime rind in large saucepan; mix well.
Add food coloring to desired tint.
Bring to a rolling boil over high heat; boil, stirring constantly, for 1 minute.
Remove from heat; stir in pectin.
Stir and skim for 5 minutes.
Ladle into hot sterilized glasses; seal with paraffin.
