|Water||1 Cup (16 tbs)|
|Ripe peaches||2 Pound|
|Sugar||7 Cup (112 tbs)|
|Liquid pectin||3 Ounce (1/2 Bottle)|
Cut orange and 1 lemon into quarters.
Grind, chop fine, or cut crosswise into wafer-thin slices.
Squeeze the juice from the second lemon.
Put these fruits and 2 tablespoons of lemon juice into saucepan.
Add water, bring to boil, and simmer, covered, for 20 minutes.
Peel and pit peaches.
Chop very fine or grind.
Combine peaches and citrus fruit and measure 4 1/2 cups into very large saucepan.
Add sugar and mix well.
Put over high heat, bring to a full rolling boil, and boil hard for 1 minute, stirring constantly.
Remove from heat and at once stir in pectin.
Skim off foam with metal spoon.
Then stir and skim for 7 minutes to cool slightly and prevent floating fruit.
Ladle into hot sterilized jars, and seal.
