Coriander Tomato Marmalade
|Cherry tomatoes/Pear tomatoes / both||1 Quart|
|Sugar||3 Cup (48 tbs)|
|Whole coriander seeds||1 Tablespoon|
Scald and peel tomatoes.
Add sugar and let stand overnight in a covered dish.
In the morning add lemon juice, finely sliced lemon peel, and coriander seeds.
Simmer, as slowly as possible, over lowest possible heat.
Stir frequently until of the consistency of marmalade.
This might take up to 3 hours.
Put into hot sterilized glasses; seal with melted paraffin.
