|Coarsely grated carrots||1 Pound (2 Cups)|
|Orange||1 Large, peel grated|
|Fresh orange juice||1⁄2 Cup (8 tbs)|
|Lemon peel||1 Large, peel grated|
|Fresh lemon juice||1⁄3 Cup (5.33 tbs)|
|Sugar||2 Cup (32 tbs)|
|Water||1 Cup (16 tbs)|
Mix all ingredients together in heavy saucepan.
Heat to boiling and simmer gently until thickened to desired consistency, about 20 minutes.
Stir frequently to prevent sticking and scorching.
Pour into sterilized glasses and seal.
