|Finely chopped cucumbers||2 Cup (32 tbs)|
|Sugar||4 Cup (64 tbs)|
|Lime juice||1⁄2 Cup (8 tbs)|
|Grated lime peel||2 Tablespoon|
|Green food coloring||3 Drop (Few Drops)|
|Fruit pectin||1⁄2 Cup (8 tbs)|
Place the cucumbers in a large saucepan, then add the sugar, lime juice and peel.
Place over high heat and add food coloring.
Bring to a rolling boil and boil for exactly 1 minute, stirring constantly.
Remove from heat and stir in pectin immediately.
Skim off foam.
Cool for 5 minutes, stirring and skimming.
Ladle quickly into sterilized glasses and cover with 1/4 inch hot paraffin.
