Using Fruit Pectin
|Oranges||2 Medium, cut into fourths and thinly sliced (Unpared)|
|Lemon||1 Small, cut into fourths and thinly sliced (Unpared)|
|Water||1 Cup (16 tbs)|
|Sugar||4 Cup (64 tbs)|
|Liquid fruit pectin||3 Ounce (1/2 Package)|
1. Mix oranges, lemon and water in 3-quart casserole. Cover tightly and microwave on high 13 to 15 minutes or until fruit peels are tender. Stir in sugar.
2. Microwave uncovered 10 to 12 minutes, stirring after 5 minutes, until entire surface of mixture is boiling. Microwave uncovered 1 minute longer. Stir in pectin thoroughly. Immediately pour into hot, sterilized jars, leaving 1/2-inch headspace. Wipe rims of jars. Seal and refrigerate up to 3 weeks. Or seal and freeze up to 6 months. Thaw and stir before serving.
