Eumquat Marmalade

Ingredients
  Kumquats 1 Pint, sliced paper thin (fresh, seeded, 2 1/2 cups slices)
  Lemon juice 1 Tablespoon
  Fresh kumquats 1 Pint, sliced paper thin (Seeded (2 1/2 Cups Slices))
  Water 4 Cup (64 tbs)
  Sugar 1 Cup (16 tbs)
Directions

Cover kumquat slices with water; let stand overnight.
In 6-quart kettle, boil mixture 30 minutes.
Measure into 3-quart saucepan.
For each cup fruit mixture, add 1 cup sugar.
Return to heat.
Cook to full rolling boil; boil hard till mixture sheets off spoon, about 3 minutes.
Stir in lemon juice.
Ladle into hot scalded jars; seal immediately.
Makes 1 pint.
