Green Raw Mango Marmalade

Ingredients
  Raw mangoes 800 Gram, skinned and grated (Large Sized)
  Sugar 1 Kilogram
  Cardamom seeds 1 Teaspoon
  Vanilla essence 2 Teaspoon (If Required)
  Green powder 3⁄4 Pinch (Use A Tiny Pinch Of Colored Edible Powder)
Directions

Place the grated mangoes in a large heavy based vessel.
Add the sugar and mix well with the mangoes and keep aside for 2 hours till the sugar turns to water.
Place the Vessel on medium heat and keep stirring every 15 minutes. The sugar should not burn.
When the syrup starts to thicken, add the cardamon seeds and keep stirring briskly until you have dried up the water and have got a sticky syrup instead. Taste the syrup. If your mangoes are very sour, make a sugar syrup separately and add to the vessel.
When the marmalade is thick and heavy, remove from the fire and then mix in the tiniest pinch of green colour, possible. Add the vanilla now, if using it.
Cool. Fill in jam jars. Refrigerate.
