Strawberry Pineapple Marmalade

Ingredients
  Pared cored chopped pineapple/Null 2 1⁄2 Cup (40 tbs) (Null)
  Grated orange peel/Null 1 Teaspoon (Null)
  Chopped orange pulp/Null 2 1⁄2 Cup (40 tbs) (Null)
  Sugar/Null 7 Cup (112 tbs) (Null)
  Stemmed strawberries/Null 1 1⁄2 Quart (Null)
Directions

Combine pineapple, orange peel, orange pulp and sugar in a large sauce pot.
Bring slowly to a boil, stirring until sugar dissolves.
Cook rapidly 15 minutes.
Add strawberries and continue cooking rapidly until thick, about 20 to 30 minutes.
As mixture thickens, stir frequently to prevent sticking.
Pour hot into hot jars, leaving 1/4-inch head space.
Adjust caps.
Process 10 minutes in boiling water bath.
