Apple Grapefruit Marmalade
|Baking soda||1⁄8 Teaspoon|
|Apples||2 3⁄4 Pound|
|Lemon juice||3 Tablespoon|
|Sugar||7 Cup (112 tbs)|
|Liquid fruit pectin||3 Ounce (1/2 Of A 6 Ounce Package, 1 Foil Pouch)|
Score grapefruit peel into 6 lengthwise sections.
Remove peel; scrape off white portion.
Cut peel into very thin strips.
Combine peel, soda, and 1 1/2 cups water.
Bring to boil.
Cover and simmer for 20 minutes; stir occasionally; drain.
Remove membrane from grapefruits.
Section grapefruits; discard seeds.
Peel, core, and coarsely chop apples.
In 8- to 10-quart kettle combine cooked peel, grapefruits, apples, lemon juice, and 1 cup water.
Bring to boiling.
Simmer, uncovered, 10 minutes.
Stir in sugar.
Bring to full rolling boil; stir constantly.
Boil 1 minute.
Remove from heat; stir in pectin.
Skim off foam.
Stir and skim for 10 minutes.
Pour into hot, clean half-pint jars, leaving 1/4 inch headspace.
Wipe jar rims; adjust lids.
Process in boiling water bath for 15 minutes (start timing when water returns to boiling).
