Prickly Pear Marmalade
|Thinly sliced lemon||1 Cup (16 tbs)|
|Seeded chopped oranges||3 Cup (48 tbs)|
|Peeled seeded chopped prickly pears||1 Quart|
|Sugar||6 Cup (96 tbs)|
Combine first 3 ingredients in a large sauce pot.
Cover and let stand 12 to 18 hours in a cool place.
Cook rapidly until peel is tender, about 30 minutes.
Cool; add pears and sugar.
Bring slowly to a boil, stirring until sugar dissolves.
Cook rapidly to jellying point, about 25 minutes.
As mixture thickens, stir frequently to prevent sticking.
Pour hot into hot jars, leaving 1/4-inch head space.
Process 15 minutes in boiling water bath.
