Pineapple Orange Marmalade
|Pineapple||5 Pound (1 Large Sized Fruit)|
|Minced ginger||3 Tablespoon|
|Sugar||3 Cup (48 tbs)|
Remove rind and core from pineapple; finely chop fruit.
Finely chop unpeeled orange, discarding seeds.
In a heavy 5-quart kettle, combine pineapple, orange, ginger, and sugar.
Bring to a gentle, rolling boil and cook, uncovered, stirring often, for 25 minutes, or until thickened.
Remove from heat and let cool.
Pour into freezer containers or jars to within 1/2 inch of top.
Cover and refrigerate up to 2 months or freeze.
