Mom'S Marinara Sauce

Ingredients
  Minced yellow onion 1 Cup (16 tbs)
  Garlic 2 Clove (10 gm), peeled and crushed
  Olive oil/Other cooking oil 1⁄4 Cup (4 tbs)
  Canned italian plum tomatoes 35 Ounce (1 Can, 2 Pound 3 Ounce, Do Not Drain)
  Tomato paste 6 Ounce (1 Can)
  Dry red wine 1⁄2 Cup (8 tbs)
  Water 1⁄2 Cup (8 tbs)
  Salt 2 Teaspoon
  Sugar 1 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Minced fresh oregano/1 teaspoon dried oregano 1 Tablespoon
  Finely grated romano cheese 1⁄4 Cup (4 tbs)
Directions

MAKING
1. Take a large, heavy saucepan and heat oil in it over medium flame
2. Saute onions and garlic in it for about ten minutes till they turn golden
3. Barring cheese, add all the other ingredients, cover the saucepan and let it simmer for an hour. Keep stirring every now and then
4. Pass the sauce through a sieve or puree it in an electric blender, little by little, at low speed
5. Reheat the sauce and bring it to simmer

SERVING
6. Garnish with cheese and serve with any pasta
