Conch In Marinara Sauce

Ingredients
  Conch meat 1 1⁄2 Pound, thinly sliced
  Olive oil 3 Tablespoon
  Garlic 2 Clove (10 gm)
  Onion 1 Small, thinly sliced
  Stalk celery 1 , minced
  Canned tomatoes 1 Pound (2 Cups Or 1 Can)
  Tomato sauce 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Ground oregano 1⁄2 Teaspoon
  Ground basil 1⁄2 Teaspoon
  Bay leaves 2
  Hot pepper seed 1⁄4 Teaspoon
Directions

Cook conch in boiling water for about 15 minutes; drain.
Put conch, oil, garlic, onion, and celery in skillet and brown well.
Remove garlic and add next 3 ingredients.
Cover and simmer until conch is tender.
Add remaining ingredients and cook for 5 minutes longer.
Hot pepper can be omitted, if preferred.
