Tomato Cucumber Marinade
|Tomatoes||2 Medium, sliced|
|Cucumber||1 Medium, peeled and thinly sliced (About 1 1/4 Cups)|
|Onion||1⁄2 Medium, thinly sliced and separated into rings (About 1 Cup)|
|Salad oil||1⁄2 Cup (8 tbs)|
|Vinegar||1⁄4 Cup (4 tbs)|
|Dried basil||1 Teaspoon, crushed|
|Dried tarragon||1 Teaspoon, crushed|
Layer tomatoes, cucumber, and onion in shallow glass dish.
Combine oil, vinegar, salt, basil, tarragon, and pepper; beat well with rotary or electric beater.
Pour mixture over vegetables.
Cover; refrigerate for 5 to 24 hours.
Drain vegetables, reserving marinade.
Arrange marinated vegetables in lettuce lined bowl.
Pass reserved marinade.
Makes 6 servings.
