Tomato Cucumber Marinade

Tomato Cucumber Marinade is a salad with a difference. The mixed flavors of vegetables just add tp the yum factor of this tomato cucumber marinade. Just give this a try.
Ingredients
  Tomatoes 2 Medium, sliced
  Cucumber 1 Medium, peeled and thinly sliced (About 1 1/4 Cups)
  Onion 1⁄2 Medium, thinly sliced and separated into rings (About 1 Cup)
  Salad oil 1⁄2 Cup (8 tbs)
  Vinegar 1⁄4 Cup (4 tbs)
  Salt 1 Teaspoon
  Dried basil 1 Teaspoon, crushed
  Dried tarragon 1 Teaspoon, crushed
  Pepper 1⁄8 Teaspoon
  Lettuce 1 Medium
Directions

Advance preparation:
Layer tomatoes, cucumber, and onion in shallow glass dish.
Combine oil, vinegar, salt, basil, tarragon, and pepper; beat well with rotary or electric beater.
Pour mixture over vegetables.
Cover; refrigerate for 5 to 24 hours.

Before serving:
Drain vegetables, reserving marinade.
Arrange marinated vegetables in lettuce lined bowl.
Pass reserved marinade.
Makes 6 servings.
