Maria's Maple Pork
|Pork tenderloin||1 1⁄2 Pound (Two 3/4-Pound Pieces)|
|Pure maple syrup||1⁄2 Cup (8 tbs)|
|Reduced-sodium soy sauce||2 Tablespoon|
|Reduced sodium ketchup||2 Tablespoon|
|Dijon mustard||1 Tablespoon|
|Grated orange zest||2 Teaspoon|
|Curry powder||1 1⁄2 Teaspoon|
|Ground coriander||1 1⁄2 Teaspoon|
|Minced garlic||2 Teaspoon|
|Worcestershire sauce||1 Teaspoon|
Trim the pork of all visible fat.
Place the pork in a large, heavy-duty, resealable plastic bag.
Whisk together all marinade ingredients in a medium bowl.
Pour over pork in bag.
Seal bag and turn several times to coat pork with marinade.
Marinate pork in the refrigerator for at least 1 hour.
Transfer pork and marinade to a small roasting pan or baking dish.
Roast, uncovered, at 350°F for 40 minutes.
Pork should still be slightly pink in the middle.
Let pork rest for 10 minutes before slicing.
Slice thinly; drizzle extra sauce over pork and serve immediately.
